BACKGROUND
I was raised in a family that valued food as a means of nourishment and connection. At the kitchen table we would discuss our day, celebrate triumphs and discuss difficulties - which helped to meld our family. My mom, grandmothers, and grandfathers enjoyed cooking - everything from apple pie to manicotti. In my early 20's, while traveling and working in Saas Fe, Switzerland, I was influenced by mentors such as Frau Elisabeth Kuhn of Stuttgart, Germany, who stated: "Life is long, follow what really interests you", which helped solidify pursuing the field of nutrition. On this path I've met amazing teachers and mentors such as Gary Newkirk MD, and Robert Maurer PhD of Family Medicine Spokane; also Vivienne Dutzar RDN, Michelle Weinbender RDN, and Hilmar Wagner RDN of The Emily Program. Tina Geithner PhD of Gonzaga University, and Rebecca Stolberg RDH, MSDH formerly of Eastern Washington University. All are stellar colleagues and teachers. My wife Joan has been my north-star and continues to explore Asian cooking, assisted by our two creative and intelligent daughters. I'm also eternally grateful to the thousands of clients and students that I've worked with over the years that also are my teachers.

Craig completed his bachelor's degree in Nutrition and Dietetics at Eastern Washington University in 1990. From 1996 to 2015 Craig conducted private practice nutrition. In 2010 he began instructing at Eastern Washington University, and also at Gonzaga University in 2013. From 1997 to 2015, Craig was the chief clinical nutrition associate at Family Medicine Spokane Residency. Favorite hobbies are travel, food, and art exploration,.
